Classic Eggnog

You can’t celebrate the holidays without a little eggnog! Creamy and delicious, serve this holiday beverage at your next hot tub soiree or enjoy it with your significant other. If you wish to add alcohol, we suggest rum, whisky or bourbon.

INGREDIENTS

  • 4 egg yolks
  • 1/3 cup sugar, plus 1 tbsp
  • 1 pint milk
  • 1 cup heavy cream
  • 1 tsp freshly grated nutmeg
  • 4 egg whites

DIRECTIONS

Beat egg yolks until they are pale in colour. Add the 1/3 cup of sugar slowly and continue to beat the egg mixture until completely dissolved and then set aside. In a medium saucepan over high heat, combine milk, cream and nutmeg, continually stirring until it comes to a boil.

Remove from heat and gradually temper the hot mixture into the egg and sugar mixture. Return to the pot and cook until the mixture reaches 160° F. Remove from heat, pour into a medium mixing bowl and set in the refrigerator to chill.

In a separate bowl, beat egg whites until they are soft peaks, then add the 1 tbsp of sugar and continue to beat until the peaks become stiff. Lastly, whisk egg whites into the chilled mixture.
